Octopus & Potatoes

Ingredients

  • 250g “Tranci di Polpo” (Marinated octopus in oil)
  • 250g Potatoes
  • 30g “Capperi in Aceto” (Small capers in brine)
  • 4 tablespoons Extra Virgin Olive oil
  • 4 slices Fresh Lemon
  • 3 tablespoon fresh chopped parsley
  • Salt
  • Black pepper

Directions

  1. Choose medium size potatoes. Rinse each potato under running water
  2. When adding the potatoes to the pot, make sure the water covers all the potatoes. Add a little bit of salt before the potatoes begin to boil. Boil the potatoes until they are tender. Poke them with a fork to make sure they are done. Do not cover the pot while they are cooking (when boiling). How long to boil potatoes? They are usually ready between 20 to 25 minutes.
  3. When they are ready, peel them and cut them in cubes
  4. Allow them to cool down to room temperature
  5. Place the potatoes in a salad bowl
  6. Add the “Tranci di Polpo”, “Capperi in Aceto” and the lemon slices
  7. Drizzle with the Extra Virgin Olive oil and add salt and black pepper
  8. Mix the salad and serve
